Simon Rimmer Watermelon Jelly with Mascarpone Cream recipe on Sunday Brunch

Simon Rimmer served up a delicious Watermelon Jelly with Mascarpone Cream dessert on Sunday Brunch.

The ingredients are: 1 watermelon, Juice 2 limes, 125g sugar, 3 sheets gelatin (or follow pack instructions to set 600ml liquid), 300g mascarpone, 100ml whipped cream, Few drops pink food colouring, 150g chopped strawberries and Garnish with flaked toasted almonds.
