Simon Rimmer served up tasty Parmesan Chicken Buns on Sunday Brunch.
The ingredients are: 6 x boneless skinless chicken thighs, 12 sun dried tomatoes – chopped, 75g finely grated Parmesan, 25g butter, 250g mayonnaise, 1 tablespoon lemon curd, Zest and juice 1 lemon, 1 beef tomato, 1 avocado sliced and 6 x deep rich brioche buns, toasted.
