Simon Rimmer served up delicious strawberry meringues with mascarpone and custard on Sunday Brunch.
The ingredients are: 4 egg whites, 130g sugar, 100g icing sugar, Half teaspoon red food colouring, 400g halved strawberries, 75g sifted icing sugar, 1 teaspoon rose water, 1 teaspoon orange blossom water, 400g tin custard, 1 teaspoon vanilla paste and 200g mascarpone.
