Gino makes Irish cream Pannacotta for Keith Duffy on Let’s Do Lunch with Gino and Mel.
The ingredients are: 2 sheets of gelatin (4g in total), 300ml double cream, 100ml Irish Cream liqueur, 1 vanilla pod, seeds removed, 50ml buttermilk and 115g caster sugar.
For the espresso caramel: 4 tsp instant espresso powder, 2 tbsp hot water, 200g caster sugar, 150ml double cream and 40g salted butter diced.
