Low sugar strawberry jam served up on Raymond Blanc Royal Kitchen Gardens.

The ingredients are: 900g strawberries, 230g sugar and 3tsp lemon juice.

For the pectin mix: 20g sugar, 7g pectin, 4tbsp water.
