Andi Oliver served up tasty sweetcorn fritters with red and green peppers using her mother-in-law recipe on Andi Oliver’s Fabulous Feasts.
The ingredients are: 100g tinned sweetcorn, drained weight, 2 spring onions, finely chopped, 20g finely chopped mixed red and green peppers, 40g self-raising flour, ½ tsp baking powder, 2 tsp cornflour, 1 tbsp green seasoning, 30g mixed coriander and parsley, chopped, 1 tsp all-purpose seasoning and 1 litre neutral oil, such as rapeseed or vegetable oil for deep-frying.
