Simon Rimmer served up a tasty Penne pasta with Rich Beef Ragu on Sunday Brunch.
The ingredients are: 1kg beef short rib, 50mm pieces, bone in, 1 finely diced onion, 2 diced carrots, 3 cloves garlic, chopped, 1 red chilli, slit down the middle, 30g tomato puree, 500ml red wine, 2 x tins chopped tomatoes, 225ml strong beef stock, Tbs Dijon mustard, 2 bay leaves, Few thyme sprigs, Tbs smoked paprika, 500g penne, 2ltr cold water, Tbs salt and Parmesan.
