Simon Rimmer served up delicious pistachio butter blondies with whipped cream and mascarpone on Sunday Brunch.
The ingredients are: 100g butter – melted, 225g sugar, 200g pistachio butter, 100g white chocolate chips, 100g raspberries, 4 eggs, 2 vanilla pods, 150g flour and 1 teaspoon baking powder.
Serve with mascarpone whipped with cream and more pistachio butter and pistachio nuts and raspberries.
