Levi Roots Caribbean chicken burgers and coleslaw with mango and chilli recipe

Levi Roots served up tasty Caribbean chicken burgers and coleslaw with mango and chilli on this morning.

The ingredients are: 6 skinless, boneless chicken thighs, 5 spring onions, roughly chopped, 1 tbsp snipped chives, 1 tbsp fresh root ginger, roughly chopped , 2 garlic cloves, crushed, 1 tsp salt, 1 egg, organic, 150g fresh mango, cut into small cubes, 2 courgettes, sliced into thin lengths, Olive oil, for brushing, 6 burger buns, buttered, Juice of 1 lime, 2 large tomatoes, sliced thickly, 1 red onion, peeled and finely sliced (optional) and Barbecue or chilli sauce (optional).

For the coleslaw: 3 tsp french mustard, 100ml cider vinegar, 8 tbsp soft light brown sugar, 100ml olive oil , Salt and pepper , ½ tbsp hot chilli sauce, ½ savoy cabbage, core discarded, finely shredded, ½ white cabbage, core discarded, finely shredded, ½ red onion, peeled, finely sliced, ½ small mango, peeled, flesh cut into matchsticks and 2 red chillies, seeded and cut into fine slivers.
