Chef Rick Stein cooks poached salmon with mayonnaise, new potatoes and cucumber salad on Saturday Kitchen.

Rick says: “There is no dish that quite sums up good British cooking like poached salmon with mayonnaise, new potatoes and cucumber salad with mint.”

The ingredients are: 1×1.5-1.75kg salmon, 2 celery stalks, sliced, 1 carrot, sliced, 1 onion, sliced, 6 bay leaves, ½ tsp black peppercorns, 65ml white wine vinegar, 750g new potatoes, scraped clean, 3 sprigs of mint, 1 cucumber, 300ml mayonnaise made with olive oil and salt.
