Prue Leith served up a tasty guacamole with tortilla chips on Prue Leith’s Cotswold Kitchen.
The ingredients are: 2 large ripe avocados, 3 spring onions, finely chopped, 2 medium tomatoes, seeded and diced, 1 jalapeño pepper, seeded and finely chopped, 10g coriander chopped, 2 cloves garlic, crushed, Juice of a lime, Salt and black pepper.
For the tortilla chips: 2 Tortillas, Oil, Salt and pepper and ½ tsp cayenne pepper.
