Henry Dimbleby served up a tasty Black Bean Shakshuka on Prue Leith’s Cotswold Kitchen.
The ingredients are: 1 Onion, chopped, 1 large Red pepper, sliced, Garlic – 4 cloves, crushed, Paprika, cumin, chilli flakes – a good teaspoon of the first two and a smaller one of the third, 1 can chopped tomato, Tomato puree- squidge, 1 jar of Queen black beans, 2 limes and 4 eggs.
For The Topping: Feta – I pack, crumbled coarsely, 1 Avocado, sliced, A sprinkle pickled green chillies and Bunch Coriander, roughly chopped.
To Serve: Chilli sauce.
