Si and Dave’s chicken yassa (Senegalese braised chicken dish) with Scotch bonnet chilli, olives, mustard and couscous recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up a tasty chicken yassa (Senegalese braised chicken and caramelised onion dish) with Scotch bonnet chilli, olives, Dijon mustard and a couscous salad on The Hairy Bikers Go West.

The ingredients for the chicken and marinade are: 1 onion, grated, 4 garlic cloves, crushed, 15g ginger, peeled and grated, 2 tbsp Dijon mustard, 2 tbsp red wine vinegar, 1 lemon, juice only, 1 Scotch bonnet chilli, finely chopped, salt and freshly ground pepper and 8 chicken thighs, skin-on and bone-in.

For the gravy: 2 tbsp vegetable oil, 4 onions, sliced, 3 bay leaves, 250ml chicken stock and 100g green pitted olives.
