Simon Rimmer served up a delicious vegan spotted dick with coconut custard on Sunday Brunch.
The ingredients are: 250g flour, 2 ½ teaspoons baking powder, Pinch salt, 125g shredded vegetable suet, 75g golden caster sugar, 125g currants, Zest 1 lemon, 1 teaspoon vanilla and 180ml almond milk.
for the custard: 200ml almond milk, 200ml coconut cream – chopped, 175ml vegan cream, 1 teaspoon vanilla, 70g sugar, 1/4 teaspoon turmeric and 2 tsp Cornflour mixed with 1 tbsp of water.
