Fred Sirieix roast chicken and sweet corn soup with and coriander recipe

Fred Sirieix served up a tasty roast chicken and sweet corn soup with and coriander on This Morning.

The ingredients for the chicken broth (if making): 1 roast chicken carcass, meat removed, 1 carrot, diced into large pieces , 1 onion, skin on, cut into quarters , A few garlic cloves, bashed , Bouquet garni – thyme and bay leaf and 2 litres water.

For the soup: 4 corn on the cob or 4 x 198g tin sweetcorn, drained , Large pinch of ground cumin , Salt and freshly ground black pepper, Approximately 1 litre fresh chicken broth or 2 chicken stock cubes and 1 litre water, 8 boneless, skin on chicken thighs, 50-100g butter and 8-10 whole garlic cloves, unpeeled.

To serve: Good quality English creme fraiche or double cream, Fresh Coriander , Sourdough bread, nice and airy loaf with a knob of butter and A glass of Red wine – preferably a Morgon – Beaujolais.
