Si and Dave’s Welsh cake tiramisu with whisky and marsala wine recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up a delicious Welsh cake tiramisu with whisky and marsala wine on The Hairy Bikers Go West.

The ingredients are: 100g raisins, 100ml Welsh whiskey, 250g self-raising flour, plus extra for dusting, 50g caster sugar, plus extra for dusting, pinch salt, ¼ tsp ground cardamom (optional), ¼ tsp ground cinnamon (optional), 125g butter, chilled and diced, plus extra for cooking and 1 free-range egg, beaten.

For the tiramisu: 2 free-range eggs, separated, plus 2 egg yolks, 50g caster sugar, 250g mascarpone, 200ml double cream, 1 tsp vanilla extract (optional), 50ml sweet marsala wine, 2 tbsp Welsh whisky, 200ml strong espresso coffee, cooled and cocoa powder, for dusting.
