Simon Rimmer served up a tasty butter bean puri ( fried bread with creamy curry) on Sunday Brunch.
The ingredients are: 450g tin butter beans, washed , Oil to fry , 2 crushed garlic cloves , 25mm grated ginger , 1 finely chopped red onion , 1 finely chopped green birds eye chilli , 1 tablespoon medium curry paste , 2 tablespoons malt vinegar , 75ml vegan cream and 1 tbsp of fresh chopped coriander.
For the puri : 250g chapatti flour , 150ml warm water Half bunch finely chopped coriander, Salt and Oil to deep fry.
