Rick Stein served up a tasty pad Thai with tofu, rice noodles, roasted peanuts and fresh coriander on Rick Stein’s Food Stories.
The ingredients are: 175g Thai folded rice noodles, 4 tbsp vegetable oil, plus 1 tsp to coat the noodles, 2 tbsp Thai fish sauce, 2 tbsp tamarind water, ½ tsp chilli flakes, plus extra to serve, 2 tbsp sweet chilli sauce, 1 tbsp palm sugar or brown soft sugar, 200g firm tofu, cut into 1½cm cubes, 1 garlic clove, peeled and chopped or grated, 2 free-range eggs, beaten, 50g beansprouts, 1 tbsp dried shrimp (optional) and 4 spring onions, trimmed, halved and shredded lengthways.
To serve: small handful fresh coriander, roughly chopped, plus extra leaves, 50g roasted peanuts, coarsely chopped and lime wedges.
