Si King and Dave Myers scallop ceviche recipe on The Hairy Bikers Go West

Simon King and Dave Myers served up a tasty scallop ceviche on The Hairy Bikers Go West.

The ingredients are: 1 small red onion, very finely sliced, 16–24 queen scallops (without roes), well chilled, 1 tomato, deseeded and very finely diced, 1 red chilli, seeds removed, finely chopped, few coriander, mint and basil leaves, salt and freshly ground black pepper, 100ml freshly squeezed lime juice (4–5 limes), 50ml freshly squeezed orange juice (about ½ large orange), 1 red chilli, 2 tbsp roughly chopped coriander stems, 1 garlic clove, peeled and bashed.
