Simon King and Dave Myers served up a delicious Irish stout fruit cake on The Hairy Bikers Go West.
The ingredients are: 250g plain flour, 25g cocoa powder, 2 tsp mixed spice, 2 tsp baking powder, pinch salt, 200g butter, diced, 200g soft dark brown sugar, 200ml Irish stout (or porter), 700g dried fruit (a mixture of glacé cherries, raisins, prunes, finely chopped candied orange peel), 1 orange, zest only and 3 large free-range eggs, beaten.
