Simon Rimmer served up a tasty Whipped Cod Roe and Fennel Crackers on Sunday Brunch.
The ingredients are: 100g white bread soaked in water for 5 minutes, 500g smoked cod roe, 100ml single cream, Clove garlic, 1 teaspoon Dijon mustard, 250ml extra virgin olive oil and Juice 1 lemon.
For the crackers: 90g flour, 90g wholemeal flour, 2 teaspoons sugar, 1 teaspoon sea salt, 2 tablespoons butter, 30ml olive oil, 110ml water and 1 teaspoon fennel seeds.
