Simon Rimmer Roasted Squash with Tahini and Pomegranate recipe on Sunday Brunch

Simon Rimmer served up a tasty Roasted Squash with Tahini and Pomegranate on Sunday Brunch.

The ingredients are: 1 butternut squash, cut into thick slices, seeds removed , 50ml rapeseed oil , 75ml honey and Zest half an orange.

For the dressing: 50g tahini , 125g plain yoghurt , Approximately 50ml hot water and 1 clove grated garlic.

For the Salad mix : 12 medjool dates, pitted and chopped , 4 tablespoons pomegranate seeds , 1tablespoon goden raisins , 20g crispy onions , Half bunch chopped parsley and mint, 12 large green pitted olives, 1 teaspoon rose water, Zest half orange, Juice full orange and 75ml rapeseed oil.
