Simon Rimmer egg and potato salad recipe on Sunday Brunch

Simon Rimmer served up a tasty egg and potato salad on Sunday Brunch.

The ingredients are: 4 x hard boiled eggs, 1kg cooked new potatoes, Half cucumber in half moons, Handful rocket, 1 tablespoon capers, 1 teaspoon chilli flakes and 1 handful snipped chives.

For the dressing: Yolks of 4 hard boiled eggs, 100ml cream, 1 teaspoon English mustard, 3 tablespoons white wine vinegar, Juice and zest half lemon, Pinch of cayenne, Salt and pepper.
