Simon Rimmer served up a delicious festive pavlova with whipped cream. mascarpone, and orange chocolate on Sunday Brunch.

The ingredients are: 7 egg whites, 1 tsp salt, 500g sugar, 20g cornflour, 15g cocoa powder and 1 tsp white wine vinegar.

For the cream mix : 600g whipped cream mixed with 100g mascarpone and 100g melted orange choc.

For the topping : 100ml water, 100g sugar, 1 Tsp vanilla, 1 Tbs Cointreau, 8 peeled clementines and 1 punnet red currants.
