Simon Rimmer served up a tasty sprouts salad with smoked almonds and manchego cheese for the festive season on Sunday Brunch.
The ingredients are: 500g blanched sprouts, halved, 150ml buttermilk, 150g flour, 1 Tsp smoked paprika, 1 Tsp garlic powder, 1 Tsp salt, 1 Tsp dried oregano, 125g smoked almonds, chopped roughly, 50g dried cranberries, 50g fresh blueberries, 25g dried blueberries and 100g Manchego cheese.
For the dressing : 1 Tbs grain mustard, 1 Tbs honey, Juice and zest of 1 lemon, 25ml white wine vinegar and 150ml extra virgin olive oil.
