Marcus Wareing served up delicious mini Christmas pudding with apple, brandy, Guinness stout, almond liqueur and cream on Marcus Wareing at Christmas.
The ingredients for the Fruits are: 75g sultanas, 100g raisins, 85g dried cherries, 50ml brandy and 50ml amaretto liqueur.
For the Pudding Mixture: 65g mixed citrus peel, 50g chopped mixed nuts, 1 x small grated apple, Zest of half a lemon, Zest of half an orange, 45g ground almonds, 80g suet, 95g breadcrumbs, 70g dark brown sugar, 30g plain white flour, ½ tsp ground allspice, ½ tsp ground cinnamon, ½ tsp ground ginger, 1 x large egg, 50g black treacle and 150ml Guinness.
For the Boozy Cream: 400ml double cream, 40g icing sugar and 4 tbsp brandy.
To Serve: Brandy, to flambe, Redcurrants and Icing sugar, to dust.
