Marcus Wareing served up a tasty Spanish inspired festive slow cooked pork belly with caramelised pears and onion gravy on Marcus Wareing at Christmas.
The ingredients are: 3kg boneless pork belly, skin on, 1 whole nutmeg, 100g rock salt, Bunch of thyme, 6 tbsp demerara sugar, 2 onions, peeled and sliced, 2 pears, peeled and sliced and 200ml chicken stock.
For the Pears: 4 pears, cut into quarters (skin on, core removed), 6 cloves of garlic, squashed but with skin left on, Few whole cloves, Rosemary sprigs, Thyme sprigs, Olive oil, Salt & pepper and 6 tbsp maple syrup.
