John Whaite served up a delicious Christmas carrot cake on Steph’s Packed Lunch.
The ingredients are: 200g carrots, 225g margarine, at room temperature, 225g golden caster sugar, 4 large free-range eggs, 225g self-raising flour, 100g dried cranberries, 75g golden raisins, 150g toasted pecans, roughly chopped, Zest of 1 large orange, 2 tsp mixed spice and 1 tsp ginger.
For the frosting: 150g icing sugar, 150g unsalted butter, at room temperature, 300g full-fat cream cheese and 2 tsp vanilla bean paste.
For the topping: 40g dried cranberries, 35g golden raisins and 75g toasted pecans.
