Freddy Forster swerved up tasty slow cooked ribs with pappardelle pasta on Steph’s Packed Lunch.
The ingredients are: 750g short rib of beef, 1 bottle of red wine, bring the wine to the boil and then cool before using, Plain flour for dusting, 2 tbsp vegetable oil, 1 large carrot, peeled and chopped, 1 large onion, peeled and chopped, 2 litres of beef stock, hot, 1 clove garlic, peeled and chopped, 50g pitted prunes, Sprig of thyme, 1 bay leaf and Dash of sherry vinegar.
For the pappardelle: 300g fresh or dried Pappardelle, 75g per portion, 100g unsalted butter, melted, 1 tbsp olive oil and Malden salt.
For the Parmesan breadcrumbs: 50g Panko breadcrumbs, toasted, 2 tbsp chives, chopped, 25g parmesan cheese, grated, 1 lemon, zested and 1 tbsp olive oil.
To serve: Shaved parmesan.
