Punk Chef (Scott Garthwaite) corn Dog Parmo recipe on Steph’s Packed Lunch

The Punk Chef (Scott Garthwaite) served up a tasty American style corn Dog Parmo on Steph’s Packed Lunch.

The ingredients for the corn dog are: 230g fine yellow corn meal, 150g plain flour, 30g caster sugar, 1 tbsp baking powder, Pinch salt, 1 large free-range egg yolk, 150ml whole milk, Plain flour to coat and 4 x cooked bratwurst sausages, plus 4 x wooden skewers.

For the bechamel: 25g unsalted butter, 25g plain flour, 250ml whole milk, 1 bay leaf, Pinch salt, Pinch pepper and ¼ tsp grated nutmeg.

To garnish: 75g Red Leicester cheese, Fried onions, shallots rings deep fried until crispy and Pickled capers and gherkins, chopped and mixed together.
