Simon Rimmer served up a tasty beef and onion pie with cream cheese pastry on Steph’s Packed Lunch.
The ingredients for the pastry are: 225g unsalted butter, 60ml cream, 100g cream cheese, 300g plain flour, Pinch salt and 1 medium free-range egg, beaten for an egg wash.
For the beef and onion pie with cream cheese pastry: 2-4 tbsp olive oil, 450g good quality beef steak mince, 1 onion, peeled and finely diced, 1 carrot, peeled and finely diced, 1 clove garlic, peeled and crushed, 2 sprigs fresh thyme, 1 tbsp tomato puree, 1 tbsp red miso, 200ml Madeira and 200ml strong beef or game stock.
To serve: steamed green vegetables and brown sauce.
