Mary Berry served up a tasty Thai chicken noodle soup with banana shallots, pak choi and button mushrooms on Mary Makes It Easy.
The ingredients are: 250g chicken breasts, boneless, skin removed. 2 litres good-quality chicken stock, 2 large banana shallots, thinly sliced, 2 garlic cloves, crushed, 1 tbsp finely grated fresh root ginger, ½ red chilli, deseeded and finely chopped, 1–2 tbsp Thai green curry paste, 2 tsp fish sauce, 1 tsp light muscovado sugar, 115g button mushrooms, sliced, 2 small pak choi, sliced into large pieces, ½ bunch fresh coriander, leaves chopped, 1 lime, juice only, 2 nests (100g) fine egg noodles, salt and freshly ground black pepper.
