Giuseppe Dell’anno cheeky coffee cake with caramel sauce recipe on Steph’s Packed Lunch

Giuseppe Dell’anno served up a delicious cheeky coffee cake with caramel sauce on Steph’s Packed Lunch.

The ingredients: 200g boiling water , 2 tbsp instant coffee granules, 160g unsalted butter, at room temperature and diced, plus extra for greasing, 160g free range egg (about 3 medium eggs), at room temperature, 280g dark brown soft sugar, 1/8 tsp salt, 1 tsp vanilla bean paste, 100g whipping cream (35–40% fat), 350g soft wheat 00 flour or plain (all-purpose) flour, plus extra for dusting, 3 tsp baking powder, 150g ground almonds, 50g (3 tbsp) dark rum or sambuca liqueur, icing sugar, for dusting.

To serve: Caramel sauce.
