Simon Rimmer served up a delicious apple and frozen berry pudding on Sunday Brunch.
The ingredients are: 3 apples, chopped and peeled, Zest and juice 1 lemon, 350g sugar, 500g bag frozen mixed berries, 2 eggs, 125ml milk, 50ml rum, 1 teaspoon vanilla, 150g flour, 1 teaspoon baking powder and 30g flaked almonds.
Serve with custard.
