Theo Michaels served up a tasty oxtail and dumplings stew with mash potatoes and green vegetables on Steph’s Packed Lunch.
The ingredients are: 1.5-2kg oxtail, Olive oil, for frying, 1 large onion, peeled and diced, 1 large leek, diced, 1 celery stick, diced, 2 inch piece of ginger, cut into 1.5cm slices, 50g plain flour, 500ml red wine, 1 large carrot, peeled and thickly sliced, 3-star anise, 2 bay leaves, 60ml dark soy sauce, Pinch of cayenne pepper, 1 tbsp smoked paprika, 60g brown sugar, 1 tbsp white wine vinegar or cider vinegar, Small bunch of coriander, 1litre beef stock, 1 garlic bulb, halved widthways and Salt and freshly ground black pepper, to season.
For the dumplings: 200g self-raising flour, 100g cold butter, grated and 80ml full-fat milk.
To serve: Mash potato and Green vegetables.
