April Jackson warming salted rum caramel and ginger cake recipe

April Jackson served up a delicious warming salted rum caramel and ginger cake on this Morning.

The ingredients for the ginger cake are: 225g self raising flour, sifted, 100g dark brown sugar, 1 tbsp ground ginger, ½ tsp ground cinnamon, ½ tsp nutmeg, 1 tsp baking soda, Pinch of salt, 150g butter, melted and cooled, 3 eggs, lightly whisked, 100g maple syrup, 60ml milk and 42g crystallised ginger, finely chopped.

For the ginger cream: 100g butter, room temperature, 3 tbsp caster sugar, 200g cream cheese and 3 tbsp finely chopped crystallised ginger.

For the salted rum caramel: 40g water, 225g caster sugar, 71g butter, room temperature, 110g double cream, 70ml dark rum, 1 tsp vanilla and Big pinch of salt.
