Simon Rimmer served up a delicious butternut squash cake with cream cheese frosting on Steph’s Packed Lunch.
The ingredients are: 3 medium eggs, separated, whites whipped, 215ml vegetable oil, 200g caster sugar, 300g roasted butternut squash or pumpkin puree, 225g plain flour, 1 ½ tsp baking powder, ½ tsp bicarbonate of soda, 1 tbsp ground cinnamon, 1 tsp grated fresh nutmeg and ½ tsp ground cloves.
For the topping: 150g unsalted butter, 1 tsp vanilla extract, 150g icing sugar, 300g full fat cream cheese, 1 orange, zested and Pumpkin seeds, to garnish.
