The Flygerians served up a tasty Beef Suya and Jollof Rice on Steph’s Packed Lunch.
The ingredients for the beef suya are: 150g roasted peanuts, 2 tbsp paprika, 2 tbsp ground ginger, 1 tsp garlic powder, 2 tbsp onion powder, 2 tbsp ground Scotch Bonnet, 2 Calabash nutmegs, preferably peeled, ½ tsp whole black peppercorns, 1.4kg sirloin steak, 1 medium onion, 1 large tomato and Vegetable oil.
For the Jollof rice: 2x 400g tins of plum tomato, 2.5kg parboiled rice, 4 red Scotch Bonnets (or less), 1 Spanish onion, ½ sliced and the other left whole, Half a large garlic bulb, peeled, 5 long bell peppers, 500mls of vegetable oil and 250g tomato puree.
For the Jollof seasoning: 250g of bouillon vegan chicken stock, 15g curry powder, 10g thyme, 10g paprika, 3 bay leaves and 15g garlic powder.
