Freddy Forster served up a tasty soy glazed salmon with rice and broccoli on Steph’s Packed Lunch.
The ingredients are: 2 x 150g pieces fresh salmon, no skin, 120ml runny honey, 80ml light soy sauce, 1 clove garlic, peeled and made into a paste, ½ tbsp fresh ginger, peeled and made into a paste, 1 tbsp sesame oil, 1 tbsp vegetable oil, 1 tbsp tomato ketchup and 1 lemon, juiced and zested.
For the sauce: 350ml coconut milk and 150g sweetcorn (can be tinned or frozen).
For the dressing: 2tbsp spring onions, finely chopped, ½ tbsp red onion, peeled and finely chopped, 1 tbsp coriander, chopped, 1 tsp red chilli, chopped, 1 lime juiced, Salt/pepper and 150ml olive oil.
To garnish: 100g tenderstem broccoli, griddled and steamed basmati rice.
