Freddy Forster braised beef cheeks with red wine gravy recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty braised beef cheeks with red wine gravy on Steph’s Packed Lunch.

The ingredients are: 1kg beef cheeks, trimmed and approx. 250g each, 1 bottle of red wine, good quality, Plain flour for dusting the beef cheeks, 4 tbsp vegetable oil, 1 large onion, peeled and cut into chunks, 1 large carrot, peeled and cut into chunks, 2 litre beef stock, hot, 1 litre chicken stock, hot, 2 sprigs of thyme and 250g button mushrooms, left whole.

For the mashed potato: 750g peeled potatoes, cut into chunks, 75ml full fat milk, 100ml double cream and 50g unsalted butter.

To serve: 8 pieces of smoked streaky bacon, cooked and 2 tbsp fresh chives, chopped.
