James Martin strawberry filled Victoria sponge cake recipe on Saturday Kitchen

James Martin makes Victoria sponge cake with strawberry compôte, fresh cream and caramel dipped strawberries on This Morning.

James says: “A traditional Victoria sponge with a sweet caramelised strawberry topping.”

The ingredients are: For the Victoria sponge: 250g butter, at room temperature, plus extra for greasing, 250g caster sugar, pinch salt, 5 free-range eggs and 250g self-raising flour, plus extra for dusting.

For the strawberry compôte: 500g strawberries, 500g jam sugar and ½ lemon, juice only.

For the fresh cream and caramel dipped strawberries: 100g sugar, 150g strawberries (stems left on),400ml double cream, whipped and icing sugar, for dusting.
