Theo Michaels pork belly teriyaki bowl with rice and spinach recipe on Steph’s Packed Lunch

Theo Michaels served up a tasty pork belly teriyaki bowl with rice and spinach on Steph’s Packed Lunch.

The ingredients for the pork are: 300g brown rice, 1kg pork belly strips, 1 pinch Chinese five spice, 30ml olive oil and 200ml water.

For the teriyaki glaze: 45ml teriyaki sauce, 30ml ketchup, 30ml honey, 1 tbsp dark soy sauce, 1 tbsp sesame oil, 1 tbsp vinegar, 1 clove garlic, minced and 1 inch ginger, grated.

For the greens:  200g spinach, 200g edamame or broad beans, 1 tbsp light soy and Sesame oil.

To serve: 1 pinch sesame seeds and 1 spring onion, thinly sliced for garnish.
