Rosemary Shrager served up a delicious chocolate and orange cake with almonds and fresh raspberries on Steph’s Packed Lunch.
The ingredients are: 125g good quality dark chocolate, 125g softened butter, cut into small pieces, plus extra for the tin, 125g caster sugar, 3 medium eggs, separated, 125g ground almonds, plus extra for the tin, 1 pinch of salt and Zest fine of 1 medium orange.
For the glacage: 125g double cream, 50g caster sugar, 50g water, 25g liquid glucose and 325g good quality dark chocolate, broken into small pieces.
