John Whaite carrot cake, cheese cake crumble bars recipe on Steph’s Packed Lunch

John Whaite served up delicious carrot cake, cheese cake crumble bars on Steph’s Packed Lunch.

The ingredients for the crumble layer are: 100g plain flour, 50g light brown muscovado sugar and 75g unsalted butter, diced.

For the carrot cake layer: 75g caster sugar, 65g plain flour, ¼ tsp bicarbonate of soda, ¼ tsp fine salt, 1tsp ground cinnamon, ½ tsp ground ginger, 50g sunflower oil, 1 large free range egg, 100g carrot, peeled and finely grated.

For the cheesecake layer: 70g caster sugar, 1½ tbsp custard powder, ¼ tsp ground nutmeg, 280g full-fat cream cheese, 60g sour cream, 1 large egg and 1 lime, zested.
