Simon Rimmer served up a tasty Courgette Tzatziki with Spicy Chickpeas on Sunday Brunch.
The ingredients are: 3 courgettes, 400g Greek yoghurt, Zest and juice 1 lemon, 2 cloves roasted garlic, 20 mint leaves chopped, 1tsp rose water and 100g toasted flaked almonds.
For the chickpeas: 1 diced red onion, 1 clove garlic, 30g tomato puree, 2tsp chilli flakes, 1tsp smoked paprika, 200ml vegetable stock, 2 x tins chickpeas, washed, Handful chopped parsley and Garnish with finely diced tomatoes and lemon.
