Simon Rimmer served up a tasty cannelloni with sugo sauce on Steph’s Packed Lunch.
The ingredients are: 2 tbsp olive oil, 250g pork shoulder, large cubes, 250g chuck steak, large cubes, 1 onion, peeled and diced, 2 cloves garlic, peeled and chopped, 75g tomato puree, 1 bay leaf, 100g nduja paste, 1 tin chopped tomatoes, 100ml red wine, 300ml beef stock, 1 tbsp each dried oregano, marjoram, basil and About 12 pieces fresh lasagne sheets, 6” x 8” (the amount you need may differ based on the size of your baking dish).
For the topping: 150g ricotta, 75g Greek yoghurt, 50g mozzarella, grated, 4 medium free-range eggs and 150g grated parmesan.
