Simon Rimmer served up tasty cinnamon spiced veggie parcels on Sunday Brunch.
The ingredients for the pastry are: 500g flour, Half teaspoon baking powder, 1 tablespoon turmeric, 120ml vegetable oil, Approximately 125ml warm water and Salt.
For the filling : 275g cooked new potatoes, 1 caramelised onion, 90g peas, 1 large grated carrot, 2 teaspoons cinnamon, 1 Teaspoon chilli flakes, 1 Teaspoon cumin, 1 Teaspoon ground coriander, Half a lemon, juice, 1 Tablespoon chopped parsley, 1 Tablespoon chopped mint and 1 Tablespoon sesame seeds.
For the sauce : 75g tahini, 150ml yoghurt (vegan or dairy), Zest half a lemon, Juice one Lemon, 1 Teaspoon cinnamon, 1 Teaspoon cumin and 75ml warm water.
