Georgina Hayden served up a tasty picadillo with minced beef, raisins and gherkins using a recipe by Sri Owen on Sunday Brunch.
The ingredients are: 3 tablespoons olive oil, 4 shallots or 1 large onion, chopped, 3 garlic cloves, chopped, 1 teaspoon finely chopped ginger or oregano (optional), 2-3 green chillies, such as jalapeño, deseeded and finely chopped, 450g lean beef, minced, 1 green pepper, deseeded and cut into small cubes, 450g ripe tomatoes, skinned, deseeded and chopped (or 1 × 400g tin of chopped tomatoes), 55g raisins, 55g olives, pitted and halved, or pimiento-stuffed olives, halved, 2 tablespoons chopped gherkins, 450g cooked long-grain rice, Salt and pepper.
To garnish: 2 hard-boiled eggs, chopped (optional) and 2 tablespoons chopped parsley.
