Simon Rimmer granola cheesecake recipe on Sunday Brunch

Simon Rimmer served up a delicious granola baked cheesecake with Greek yoghurt on Sunday Brunch.

The ingredients for the base are: 150g crushed digestive biscuits, 50g granola (from below) and 100ml melted butter.

for the granola: 300g rolled oats, 75g coconut flakes, 50g rice crispies, 60g flour, Half teaspoon baking powder, Pinch salt, 120g sugar, 75ml coconut oil, 250g honey and 50g dried cherries.

For the topping: 500g cream cheese, 200g ricotta, 300g Greek yoghurt, full fat and drained for mininum 20 minutes, 125g sugar, 2 teaspoon pure vanilla extract, 6 eggs and Zest 1 lemon.
