Simon Rimmer served up a tasty Moroccan spaghetti on Steph’s Packed Lunch.
The ingredients are: 300g spaghetti, 2 tbsp olive oil, 1 onion, peeled and finely chopped, 2 garlic cloves, peeled and crushed, 8 tomatoes, finely chopped, 1 tsp ground cinnamon, 1 tsp ground cumin, Pinch of turmeric, 50g toasted, slivered almonds, 1 can chickpeas, drained and rinsed, Handful each of fresh parsley, mint and coriander, finely chopped and 2-4 tbsp olive oil.
